  • These are the Ingredients required to prepare the dish:
  • 1 large cucumber peeled and diced
  • a large red onion diced
  • 1 green bell pepper diced
  • a pint cherry tomatoes halved
  • 1/2 cup kalamata olives pitted and halved
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley leaves chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon freshly squeezed lemon juice
  • teaspoon dried oregano
  • kosher salt and freshly ground black pepper to taste
  • Serves 4-6 people

Instructions
 

  • In a large bowl, combine the cucumber, red onion, green bell pepper, cherry tomatoes, kalamata olives, feta cheese, and parsley.
  • In a small bowl whisk together the olive oil, red wine vinegar, lemon juice, and oregano. Season with salt and pepper to taste. Pour over the salad ingredients and toss to coat.
  • Serve at room temperature or chilled. Enjoy!
