Summer Asian Slaw
Summer Asian Slaw is a refreshing and colorful side dish. It is made with shredded red cabbage, julienned carrots, bell peppers, and scallions, all tossed in a piquant Asian-style dressing.

- 1/2 small head of green cabbage very thinly sliced
- 1/2 small head of red cabbage very thinly sliced
- 2 large carrots peeled and grated
- 1/2 cup cilantro leaves chopped
- 1/4 cup mint leaves chopped
- 1/4 cup Thai basil leaves chopped
- 3 tablespoons rice vinegar
- 2 tablespoons fish sauce
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1/2 teaspoon kosher salt
Start by mixing the cabbage, radishes, and scallions in a large bowl.
In a separate bowl, whisk together the rice vinegar, lime juice, fish sauce, sugar, and chili pepper.
Pour the dressing over the cabbage mixture and toss to coat.
Let the slaw sit for at least 15 minutes before serving to allow the flavors to meld.
Serve chilled or at room temperature
