Summer Asian Slaw is a refreshing and colorful side dish. It is made with shredded red cabbage, julienned carrots, bell peppers, and scallions, all tossed in a piquant Asian-style dressing.

Ingredients
  

  • 1/2 small head of green cabbage very thinly sliced
  • 1/2 small head of red cabbage very thinly sliced
  • 2 large carrots peeled and grated
  • 1/2 cup cilantro leaves chopped
  • 1/4 cup mint leaves chopped
  • 1/4 cup Thai basil leaves chopped
  • 3 tablespoons rice vinegar
  • 2 tablespoons fish sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon kosher salt

Instructions
 

  • Start by mixing the cabbage, radishes, and scallions in a large bowl.
  • In a separate bowl, whisk together the rice vinegar, lime juice, fish sauce, sugar, and chili pepper.
  • Pour the dressing over the cabbage mixture and toss to coat.
  • Let the slaw sit for at least 15 minutes before serving to allow the flavors to meld.
  • Serve chilled or at room temperature
