Summer Asian Slaw
Summer Asian Slaw is a refreshing and colorful side dish. It is made with shredded red cabbage, julienned carrots, bell peppers, and scallions, all tossed in a piquant Asian-style dressing.

- 1/2 small head of green cabbage very thinly sliced
- 1/2 small head of red cabbage very thinly sliced
- 2 large carrots peeled and grated
- 1/2 cup cilantro leaves chopped
- 1/4 cup mint leaves chopped
- 1/4 cup Thai basil leaves chopped
- 3 tablespoons rice vinegar
- 2 tablespoons fish sauce
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 1/2 teaspoon kosher salt
- Start by mixing the cabbage, radishes, and scallions in a large bowl. 
- In a separate bowl, whisk together the rice vinegar, lime juice, fish sauce, sugar, and chili pepper. 
- Pour the dressing over the cabbage mixture and toss to coat. 
- Let the slaw sit for at least 15 minutes before serving to allow the flavors to meld. 
- Serve chilled or at room temperature
