Indian Yellow Split Pea Curry

Ingredients
  

  • 1 cup yellow split peas
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 teaspoon grated ginger
  • 1 tablespoon olive oil
  • 2 teaspoons cumin seeds
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cayenne pepper
  • 1 14.5 ounce can diced tomatoes, undrained
  • 3 cups water
  • salt and black pepper to taste

Instructions
 

  • Start by heating the oil in a large saucepan over medium heat. Add the cumin and fry for a minute until fragrant.
  • Add the onions and fry for 5 minutes until softened.
  • Stir in the garlic and ginger and fry for a further minute.
  • Add the turmeric, cumin, coriander and chilli powder and fry for a further minute.
  • Add the split peas and fry for a minute to coat in the spices.
  • Pour in the water or stock and bring to a boil. Reduce the heat to low and simmer for 30 minutes or until the peas are tender.
  • Stir in the coconut milk or cream and season to taste with salt and pepper. Simmer for a further 5 minutes or until heated through
