Spicy Watermelon Tomato Salad

Ingredients
  

  • 1. Ingredients: 1/2 small seedless watermelon cut into bite-sized pieces
  • 1 pint cherry tomatoes halved
  • 1/4 small red onion diced
  • 1 small jalapeño pepper seeded and diced
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons freshly squeezed lime juice
  • 2 tablespoons extra-virgin olive oil
  • Coarse salt and freshly ground black pepper to taste

Instructions
 

  • Start by chopping the watermelon into bite-sized pieces. You can do this by cutting it into small squares or triangles.
  • Next, add in the diced tomatoes. Make sure to seed the tomatoes first so that they don't make the salad too watery.
  • For the final ingredient, add in some diced jalapeño peppers. If you want a milder flavor, you can remove the seeds from the peppers before dicing them up.
  • Once all of the ingredients are in the bowl, mix everything together gently until it's evenly mixed.
  • Serve immediately or refrigerate for later. Enjoy!
