Spicy Watermelon Tomato Salad

- 1. Ingredients: 1/2 small seedless watermelon cut into bite-sized pieces
- 1 pint cherry tomatoes halved
- 1/4 small red onion diced
- 1 small jalapeño pepper seeded and diced
- 1/4 cup chopped fresh cilantro
- 3 tablespoons freshly squeezed lime juice
- 2 tablespoons extra-virgin olive oil
- Coarse salt and freshly ground black pepper to taste
- Start by chopping the watermelon into bite-sized pieces. You can do this by cutting it into small squares or triangles. 
- Next, add in the diced tomatoes. Make sure to seed the tomatoes first so that they don't make the salad too watery. 
- For the final ingredient, add in some diced jalapeño peppers. If you want a milder flavor, you can remove the seeds from the peppers before dicing them up. 
- Once all of the ingredients are in the bowl, mix everything together gently until it's evenly mixed. 
- Serve immediately or refrigerate for later. Enjoy!
